No, it wasn't a Sunday and yes, I actually made and ate this as the first meal of the day: a full course Wednesday breakfast. A bit sleep deprived this particular morning as sleep was short however the 60 minutes it took to make this were well worth the attention.

Are you a breakfast eater? I'd like to claim it was a consistent routine but it's just something i've started to enjoy on a regular basis... my pro-tip to you who don't identify with eating every morning: Don't eat breakfast simply because you read that it's important, eat it because you notice and like the difference in how you show up in your activities because of it.
I hope at some point breakfast breaks away from the reputation that it should be eaten and begins to be seen from the light that it's one of life's pleasures: to be present and enjoy. The universe is all around - including in how we feel and experience things such as food.
Food is fuel.
A simple scrambled egg with steamed peppers, cauliflower and radishes (yes, I steam radishes, it's a new thing, I like it!), bacon and finally the side of quinoa and banana pudding steals the show.

Breakfast Quinoa:
1 cup Quinoa
1 cup water
1 cup almond milk
couple dashes nutmeg
mix all together and boil with tight lid for 15 minutes.
turn element off, stir occasionally over 10 minutes. all the liquid should be absorbed.

Chocolate pudding:
2 (not frozen) bananas
1 cup milled flaxseed
1 tablespoon cacao
1 cup almond milk
2 dashes cinnamon
1/2 teaspoon vanilla
1 egg
put together in intense blender (bullet or food processor!)
blend on medium speed until smooth.
Texture/can be changed by adding almond milk to make it smoother/more liquid
and milled flaxseed to thicken.
Ready, set, SERVE
to serve, I use a bowl. a scoop or two of quinoa and then pour a plop of pudding over. I top it with thin slices of strawberry. You can top it with nothing or
maybe some shaved coconut or blueberries!
... have fun and enjoy!
